Take the meat (I'll be making chicken), cut into pan sized pieces.
Marinade.
Mix an acid (citrus or red wine) with
spices.
I use rosemary, lemon, garlic powder, salt, honey, pepper and a bit of cayenne pepper.
Mix all of this together in a metal bowl and add the chicken.
Let it sit in the marinade for half an hour to four hours (no more).
Heat the pan on high (for sixty seconds or untill you can sprinkle water on it and it evaporates instantly) add oil ,salt, and proper, mix, add the chicken, brown.
Add marinade, cover.
cook for 45 minutes on medium low..
you're done!
